Refreshing Lavender Blueberry Lemonade

A delicate, fragrant lemonade combining floral lavender, tart blueberries, and fresh herbs for a soothing summer drink that’s quick and easy to make.

  • 1 cup fresh blueberries (about 150 grams)
  • 4 large lemons (to yield about 1 cup or 240 ml lemon juice)
  • 1 tablespoon dried culinary lavender or 2 tablespoons fresh lavender buds
  • 45 sprigs fresh herbs (thyme preferred, or mint/basil)
  • 1/4 cup honey or agave syrup (60 ml)
  • 4 cups chilled water (960 ml)
  • Ice cubes for serving

Instructions

  1. Bring 1 cup (240 ml) of water to a gentle boil, remove from heat, add lavender buds and steep for 10 minutes. Strain lavender water through a fine mesh sieve and set aside to cool.
  2. Rinse blueberries and blend with 1/2 cup (120 ml) cold water until smooth. Strain puree through a sieve to remove skins and seeds, pressing gently to extract juice.
  3. Juice the lemons to yield about 1 cup (240 ml) lemon juice. Strain out seeds and pulp if desired.
  4. In a large pitcher, combine cooled lavender water, blueberry puree, lemon juice, and honey or agave syrup. Stir until sweetener dissolves. Add 3 cups (720 ml) cold water and stir to blend.
  5. Add fresh herb sprigs to the pitcher and chill in the refrigerator for at least 30 minutes. Remove herb sprigs before serving and add ice cubes.

Notes

Do not oversteep lavender to avoid bitterness; 10 minutes is ideal. Strain blueberry puree well for smooth texture. Adjust sweetness to taste. Remove herb sprigs before serving to avoid overpowering herbal notes. For a sparkling version, add sparkling water before serving. Frozen blueberries can be used and double as ice cubes.
