Refreshing Lavender Honey Lemonade

A subtly floral and gently sweet lemonade made with fresh lemon juice, honey, and culinary lavender. Perfect for cooling down on hot summer days with a calm, fragrant twist.

Ingredients

  • 45 medium fresh lemons (about 1 cup / 240 ml lemon juice)
  • 2 tablespoons dried culinary lavender (food grade)
  • 1/3 cup (113 g) honey (raw, local preferred)
  • 4 cups (960 ml) water, divided
  • Ice cubes, for serving
  • Optional: lemon slices or fresh lavender sprigs for garnish

Instructions

  1. Roll the lemons firmly on the counter, cut in half, and juice until you have about 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds and pulp if desired.
  2. In a small saucepan, combine 2 cups (480 ml) of water with the dried lavender and honey. Heat gently over medium-low heat until just before boiling, stirring occasionally to dissolve the honey. Remove from heat and let steep for 10 minutes.
  3. Strain the lavender infusion through a fine mesh sieve or cheesecloth into a large pitcher, pressing lightly to extract all liquid but leaving lavender bits behind.
  4. Add the fresh lemon juice to the pitcher with the lavender honey water. Add the remaining 2 cups (480 ml) of cold water to dilute. Stir well and adjust sweetness or strength by adding more water or honey if needed.
  5. Refrigerate the lemonade for at least 30 minutes before serving. Serve over plenty of ice cubes and garnish with lemon slices or fresh lavender sprigs if desired.

Notes

Use culinary-grade lavender to avoid unwanted flavors. Steep lavender gently to prevent bitterness. Strain thoroughly for a smooth texture. Adjust sweetness gradually. Chill before serving for best flavor. For a fizzy version, replace some cold water with sparkling water just before serving.
