Refreshing Lavender Honey Lemonade with Blueberries and Mint

A delicate and refreshing lemonade infused with floral lavender honey syrup, fresh lemon juice, blueberries, and mint, perfect for summer gatherings and moments of calm.

  • 1 cup water (240 ml)
  • ยฝ cup honey (170 g) โ€“ preferably raw, local honey
  • 2 tablespoons dried culinary lavender buds (food-grade)
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 3 cups cold water (720 ml)
  • 1 cup fresh blueberries (150 g), rinsed and patted dry
  • ยฝ cup fresh mint leaves, gently washed and lightly bruised
  • Ice cubes, as needed for serving
  • Optional: 1 cup sparkling water (to replace 1 cup cold water for a sparkling twist)
  • Optional vegan substitute: pure maple syrup instead of honey

Instructions

  1. Make the lavender honey syrup: In a small saucepan, combine 1 cup water, ยฝ cup honey, and 2 tablespoons dried lavender buds. Bring to a gentle simmer over medium heat, stirring occasionally to dissolve the honey. Let it simmer for about 5 minutes, then remove from heat and let it steep for another 10 minutes.
  2. Strain the syrup: Pour the syrup through a fine mesh strainer into a bowl or pitcher to remove all the lavender buds. Press gently on the buds with the back of a spoon to extract flavor without bitterness. Set the syrup aside to cool.
  3. Juice the lemons: While the syrup cools, juice enough lemons to get 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds and excess pulp for a smooth base.
  4. Mix the lemonade base: In a large pitcher, combine the cooled lavender honey syrup with the fresh lemon juice and 3 cups (720 ml) cold water. Stir gently to combine. Adjust sweetness or tartness by adding more water or lemon juice if needed.
  5. Prepare the garnish: Lightly muddle the fresh mint leaves and blueberries in a small bowl or directly in the pitcher to release their fragrance and juices without pulverizing them. Add plenty of ice to the pitcher, then stir gently to chill and mix everything.
  6. Serve: Pour into glasses, including some blueberries and mint leaves in each. For a sparkling version, add sparkling water to taste right before serving.
