  • 6 medium fresh lemons, juiced (about 1 cup or 240 ml lemon juice)
  • 1/2 cup (120 ml) lavender honey
  • 4 cups (960 ml) cold water, divided
  • 1 tablespoon dried culinary lavender buds (optional)
  • Ice cubes, as needed
  • Fresh lavender sprigs for garnish (optional)

Instructions

  1. Roll each lemon firmly on the counter, cut in half, and juice until you get about 1 cup (240 ml) of lemon juice. Strain through a sieve to remove seeds and pulp if desired.
  2. Optional: In a small saucepan, combine 1/2 cup (120 ml) water with 1 tablespoon dried lavender buds. Warm gently over low heat for about 5 minutes without boiling. Remove from heat and strain out the buds. Let cool slightly.
  3. Add 1/2 cup (120 ml) lavender honey to the warm lavender water (or plain warm water if skipping lavender buds). Stir until honey dissolves completely.
  4. In a large pitcher, stir together the fresh lemon juice and lavender honey syrup.
  5. Pour in the remaining 3 1/2 cups (840 ml) cold water. Stir well and adjust sweetness or tartness by adding more water or honey if needed.
  6. Refrigerate for at least 1 hour to chill and let flavors meld.
  7. Serve over ice cubes and garnish with fresh lavender sprigs if desired.

Notes

Use fresh lemons for best flavor. Warm honey gently to preserve floral notes. Infuse lavender carefully to avoid bitterness. Adjust sweetness gradually. Chill fully before serving. For vegan option, substitute honey with maple syrup.
