Refreshing Lavender Lemonade Recipe

A calming yet invigorating lavender lemonade sweetened with raw honey, perfect for summer afternoons and easy to make in under 15 minutes.

  • 6 medium fresh lemons, juiced (about 3/4 cup or 180 ml)
  • 2 tablespoons dried culinary lavender buds
  • 1/3 to 1/2 cup raw honey (80120 ml), adjust to taste
  • 4 cups water (960 ml), divided
  • Ice cubes, plenty for serving
  • Optional garnishes: fresh lavender sprigs, lemon slices, or mint leaves

Instructions

  1. Roll lemons on the counter to loosen juice, cut in half and juice to extract about 3/4 cup (180 ml) fresh lemon juice (about 5 minutes).
  2. Bring 2 cups (480 ml) water to a gentle boil in a saucepan. Remove from heat and add 2 tablespoons dried culinary lavender buds. Cover and steep for 10 minutes.
  3. Strain lavender water through a fine mesh strainer or cheesecloth into a heatproof bowl or pitcher, pressing gently to extract essence. Discard lavender buds.
  4. While lavender water is still warm, stir in 1/3 to 1/2 cup (80-120 ml) raw honey until fully dissolved. Taste and adjust sweetness. Let syrup cool to room temperature (10-15 minutes).
  5. In a large pitcher, combine lavender-honey syrup, fresh lemon juice, and remaining 2 cups (480 ml) cold water. Stir well.
  6. Add ice cubes and chill in refrigerator for at least 30 minutes before serving.

Notes

Steep lavender gently off the boil to avoid bitterness. Strain thoroughly for smooth texture. Add honey while warm for best dissolution. Chill lemonade for at least 30 minutes to meld flavors. Adjust honey to taste. For stronger lavender flavor, steep up to 15 minutes but watch for bitterness. Can substitute agave nectar for vegan version and sparkling water for bubbly lemonade.
