Refreshing Lavender Oat Milk Latte

A floral, creamy iced latte featuring espresso, oat milk, and lavender syrup, perfect for a refreshing springtime pick-me-up.

  • 2 shots espresso or strong coffee (about 2 fl oz / 60 ml)
  • 1 cup oat milk (240 ml), preferably barista-style
  • 2 tablespoons lavender syrup (30 ml), homemade or store-bought
  • Ice cubes (about 1 cup / 240 ml)
  • 1 teaspoon sweetener like maple syrup or agave nectar (optional)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Make the Lavender Syrup (if homemade): Combine 1 cup water (240 ml), 1 cup sugar (200 g), and 2 tablespoons dried culinary lavender buds in a small saucepan. Heat over medium, stirring until sugar dissolves. Once boiling, reduce heat and simmer gently for 5 minutes. Remove from heat and let steep for 15 minutes. Strain out lavender buds and set syrup aside to cool.
  2. Brew the Espresso: Pull 2 shots (about 2 fl oz / 60 ml) of espresso using your machine or prepare strong coffee equivalent. Let it cool slightly (about 2 minutes) so it doesnโ€™t melt the ice too fast.
  3. Prepare the Oat Milk: Pour 1 cup (240 ml) oat milk into a frother or jar. Froth it until creamy and slightly foamy, or shake vigorously for 30 seconds if no frother is available.
  4. Assemble the Latte: Fill a tall glass with ice cubes (about 1 cup / 240 ml). Pour in the cooled espresso, then add 2 tablespoons (30 ml) of lavender syrup and a dash of vanilla extract. Stir gently to combine.
  5. Add the Oat Milk: Slowly pour the frothed oat milk over the back of a spoon onto the espresso mixture to create a layered effect if you like. Stir before drinking or leave layered for presentation.

Notes

Use culinary-grade lavender buds only to avoid bitterness. Do not oversteep lavender syrup (max 15 minutes). Froth oat milk cold for best iced latte texture. Adjust lavender syrup to taste. Vanilla extract enhances flavor. Shaking oat milk in a jar works if no frother is available.
