  • 2 ounces (60 ml) vodka (neutral, e.g., Titoโ€™s or Smirnoff)
  • 3 ounces (90 ml) unsweetened coconut milk, chilled
  • 1 ounce (30 ml) fresh lime juice, freshly squeezed
  • 1 teaspoon low-carb sweetener (stevia, erythritol, or monk fruit, adjust to taste)
  • 2 ounces (60 ml) sparkling water or club soda, chilled
  • Ice cubes (preferably large cubes)
  • Lime slices or zest for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Roll 2 medium limes on the counter to soften, then juice to extract about 1 ounce (30 ml) fresh lime juice. Strain to remove seeds and pulp.
  2. In a cocktail shaker or jar, combine 2 ounces (60 ml) vodka, 3 ounces (90 ml) chilled unsweetened coconut milk, 1 teaspoon low-carb sweetener, and the fresh lime juice. Add a few ice cubes.
  3. Seal the shaker and shake vigorously for 15-20 seconds until cold and slightly frothy.
  4. Fill a highball glass with fresh large ice cubes.
  5. Strain the shaken mixture into the glass over the ice, leaving room at the top.
  6. Gently pour in 2 ounces (60 ml) chilled sparkling water or club soda and stir lightly with a bar spoon to mix without losing fizz.
  7. Garnish with a thin lime wheel or twist on the rim and a sprig of fresh mint if desired. Optionally, add a little lime zest on top.

Notes

Shake the coconut milk and vodka first without sparkling water to preserve bubbles. Use fresh lime juice for best flavor. Large ice cubes prevent quick dilution. Adjust sweetness carefully to keep the drink crisp and light. Prepare just before serving to maintain fizz.
