A visually stunning, layered lime punch perfect for St. Patrick’s Day celebrations. This refreshing drink combines tangy lime, creamy coconut, and fizzy lime soda for a playful and crowd-pleasing beverage.

  • 1/2 cup (120 ml) fresh lime juice
  • 1/4 cup (60 ml) simple syrup (store-bought or homemade)
  • A few drops green food coloring (optional)
  • 1/4 cup (60 ml) cream of coconut (optional but recommended)
  • Ice cubes (clear ice preferred)
  • Lime slices for garnish
  • Mint leaves for garnish (optional)
  • Optional for spiked version: 1 cup (240 ml) white rum or vodka

Instructions

  1. Chill all your ingredients and glassware for at least an hour to help with layering.
  2. Prepare simple syrup if not using store-bought by boiling equal parts sugar and water until sugar dissolves, then cool.
  3. In a pitcher, combine chilled lime soda with simple syrup and a few drops of green food coloring. Stir gently to mix without losing fizz.
  4. In a separate container, mix fresh lime juice with cream of coconut to create a heavier, creamy bottom layer.
  5. Fill the pitcher about halfway with clear ice cubes to slow mixing and aid layering.
  6. Slowly pour the lime juice and cream mixture over the back of a spoon onto the ice to form the bottom layer.
  7. Carefully pour the lime soda mixture over the back of a spoon to maintain separation and create a sparkling top layer.
  8. Garnish with thin lime slices and mint leaves before serving.
