  • 2 inches red ginger root, peeled and thinly sliced
  • 2 tablespoons raw honey
  • Juice of half a fresh lemon
  • 3 cups filtered water
  • 1 small cinnamon stick (optional)
  • A handful of fresh mint leaves (optional, for garnish)

Instructions

  1. Peel about 2 inches of red ginger root and slice it thinly (about 1/8-inch slices).
  2. In a small saucepan, combine 3 cups (720 ml) of filtered water and the sliced ginger. Add the optional cinnamon stick if using.
  3. Bring to a gentle boil over medium heat, then reduce to low and let it simmer uncovered for 10 minutes.
  4. Remove the pot from heat and strain the liquid using a fine mesh strainer into a heatproof bowl or mugs, discarding the ginger slices and cinnamon stick.
  5. Stir in 2 tablespoons of raw honey while the liquid is still warm (not boiling).
  6. Add the juice from half a fresh lemon and adjust sweetness or acidity to taste.
  7. Pour into mugs and garnish with fresh mint leaves if desired. Serve warm or cool completely for iced version.

Notes

Do not add honey to boiling water to preserve its enzymes and flavor. Thinly slice ginger for better flavor extraction but avoid shredding to ease straining. For a cold version, cool the infusion completely before adding ice. Substitute maple syrup for honey for a vegan option. Store leftovers in the refrigerator up to 3 days and reheat gently.
