  • 2 cups ripe mangoes, peeled and chopped (Ataulfo mangoes recommended)
  • 1 medium-sized pink-fleshed dragonfruit, peeled and cubed (frozen dragonfruit can be used)
  • Juice of 2 medium lemons (freshly squeezed)
  • 2 cups cold water
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • Ice cubes (as needed for serving)
  • Mint leaves (optional, for garnish)

Instructions

  1. Prepare the fruits: Peel and chop the ripe mangoes into chunks (about 2 cups). Peel and cube the dragonfruit. Remove lemon seeds and juice the lemons.
  2. Blend the mango: Place mango chunks in the blender with 1 cup of cold water. Blend until smooth and creamy with a bit of pulp for texture.
  3. Blend the dragonfruit: Rinse the blender, then add dragonfruit cubes with remaining 1 cup of cold water. Blend until smooth but slightly textured.
  4. Combine and sweeten: Pour mango puree into a large pitcher, slowly add dragonfruit puree to create a swirl effect. Add lemon juice and honey or agave syrup, stirring gently. Taste and adjust sweetness.
  5. Chill and serve: Add ice cubes to glasses. Pour the refresher carefully to maintain layers. Garnish with mint leaves if desired.

Notes

Use ripe mangoes for best sweetness and texture. Blend mango and dragonfruit separately to preserve color and texture. Sweeten gradually to taste. Chill water and glasses beforehand. Pour slowly over ice to maintain swirl effect. Prepare fruit purees ahead and mix with lemon juice and sweetener before serving for convenience.
