Refreshing Matcha Boba Green Tea Milk

A quick and easy homemade drink combining creamy matcha milk with chewy tapioca pearls for a refreshing and playful treat.

  • 2 teaspoons matcha powder (ceremonial grade recommended)
  • 1/4 cup dry tapioca pearls (small to medium size)
  • 1 cup water (for cooking tapioca pearls)
  • 1 cup milk (whole milk or oat/almond milk for dairy-free options)
  • 1 to 2 tablespoons sweetener (simple syrup, honey, or agave syrup, adjust to taste)
  • Ice cubes (as needed)
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Bring 1 cup (240 ml) of water to a rolling boil in a medium saucepan.
  2. Add 1/4 cup (about 45 grams) of dry tapioca pearls, stirring gently to prevent sticking.
  3. Cook uncovered for 8 to 10 minutes, stirring occasionally, until pearls are translucent and chewy but not mushy.
  4. Drain the pearls using a slotted spoon and rinse under cold water to stop cooking and remove excess starch.
  5. Set aside the pearls in a small bowl; optionally toss with a teaspoon of simple syrup or honey to keep them sweet and sticky.
  6. In a heatproof bowl, sift 2 teaspoons of matcha powder to avoid lumps.
  7. Add 2 tablespoons (30 ml) of hot water (about 175ยฐF/80ยฐC) and whisk vigorously in a zigzag motion until smooth and vibrant green.
  8. Stir in 1 tablespoon (15 ml) of preferred sweetener while the matcha paste is still warm.
  9. Pour 1 cup (240 ml) of milk or milk alternative into the matcha mixture.
  10. Add 1/4 teaspoon vanilla extract and a pinch of salt if using; stir well to combine.
  11. Place about 3 tablespoons of tapioca pearls into a tall glass.
  12. Fill the glass with ice cubes, then pour the matcha milk over the top.
  13. Gently stir to mix the pearls evenly.
  14. Serve immediately with a wide straw or spoon to enjoy the chewy pearls.

Notes

Use ceremonial grade matcha for best flavor and color. Avoid boiling water when mixing matcha to prevent bitterness. Cook tapioca pearls until chewy but not mushy. Chill matcha milk before assembling for extra refreshment. Store cooked pearls and matcha milk separately in the fridge for up to 24 hours; pearls may harden over time.
