  • 1 oz (30 ml) fresh lime juice, freshly squeezed
  • 6 oz (180 ml) ginger beer (naturally brewed, e.g., Reedโ€™s or Fever-Tree)
  • 2 oz (60 ml) club soda
  • 45 fresh mint leaves
  • Plenty of ice cubes or crushed ice
  • 12 dashes bitters (optional, e.g., Angostura bitters)
  • 1 tsp simple syrup (optional)

Instructions

  1. Roll the limes on your countertop to loosen the juice. Cut one lime in half and use a juicer to extract about 1 oz (30 ml) of juice per serving. Strain to remove seeds.
  2. In your copper mug or glass, add 4-5 fresh mint leaves. Gently muddle with a muddler or the back of a spoon to release oils without shredding.
  3. Add the fresh lime juice and 1 tsp simple syrup if desired. Stir gently to combine with the muddled mint.
  4. Fill the mug or glass with plenty of ice cubes or crushed ice.
  5. Slowly pour 6 oz (180 ml) ginger beer followed by 2 oz (60 ml) club soda down the side to preserve carbonation.
  6. Add 1-2 dashes of bitters if using, and stir very lightly to blend flavors without losing fizz.
  7. Garnish with a lime wedge and a sprig of fresh mint. Serve immediately while cold and bubbly.

Notes

Use fresh lime juice for best flavor. Choose a naturally brewed ginger beer for the best spicy kick. Avoid over-muddling mint to prevent bitterness. Keep mugs chilled and add ginger beer and club soda last to maintain fizz. Simple syrup and bitters are optional to adjust sweetness and complexity.
