  • 2 ounces (60 ml) nonalcoholic Aperol substitute (e.g., Lyreโ€™s Italian Orange or a DIY blend with bitter orange soda and pomegranate molasses)
  • 3 ounces (90 ml) sparkling water (plain or lightly flavored like lemon or lime)
  • Ice cubes
  • Blood orange slices for garnish
  • 1 teaspoon simple syrup or honey (optional)

Instructions

  1. Juice about 2-3 medium blood oranges to get around 3 ounces (90 ml) of fresh juice. Strain if needed to remove seeds.
  2. Fill a highball or wine glass about halfway or more with ice cubes.
  3. Pour 2 ounces (60 ml) of nonalcoholic Aperol substitute over the ice.
  4. Add the freshly squeezed blood orange juice carefully to maintain layering.
  5. Top off the glass with approximately 3 ounces (90 ml) of sparkling water, adding slowly to keep the fizz.
  6. If desired, stir in 1 teaspoon of simple syrup or honey to sweeten.
  7. Garnish with a slice or two of blood orange and optionally a sprig of rosemary.
  8. Gently stir with a spoon or cocktail stirrer just enough to combine without losing bubbles.

Notes

Pour sparkling water slowly and stir gently to keep bubbles intact. Adjust sweetness gradually to balance bitterness. Freshly squeezed blood orange juice is key for best flavor and color. Serve immediately for optimal fizz. Leftovers can be stored refrigerated up to 24 hours without ice; add fresh sparkling water before serving again.
