A visually stunning and delicious layered berry lemonade that combines sweet berries and tangy lemon juice for a refreshing summer drink.

Ingredients

Scale
  • 6 large fresh lemons (juiced to yield 1 cup / 240 ml lemon juice)
  • ยพ cup (150 g) granulated sugar (adjust to taste)
  • 4 cups (950 ml) cold water
  • Ice cubes (as needed for serving)
  • 2 cups (300 g) mixed berries (fresh or frozen; raspberries, blackberries, blueberries)
  • ยฝ cup (100 g) granulated sugar
  • ยฝ cup (120 ml) water
  • Lemon zest from 1 lemon (optional for extra zing)
  • Fresh mint leaves (optional garnish)
  • Thin lemon slices or wedges (optional garnish)
  • Whole berries (optional garnish)

Instructions

  1. Make the Berry Syrup: In a medium saucepan, combine 2 cups mixed berries, ยฝ cup granulated sugar, ยฝ cup water, and lemon zest if using. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until berries break down and mixture thickens slightly. Remove from heat and strain through a fine mesh sieve into a bowl, pressing solids to extract syrup. Set aside to cool completely.
  2. Prepare the Lemonade Base: Juice about 6 large lemons to get 1 cup lemon juice. In a large pitcher, combine lemon juice with ยพ cup sugar and 4 cups cold water. Stir until sugar dissolves completely. Adjust sweetness to taste.
  3. Layer the Drink: Fill glasses or a large clear pitcher halfway with ice cubes. Pour lemonade base slowly. Gently pour cooled berry syrup over the back of a spoon held just above the lemonade surface to create layers. The syrup will settle at the bottom, creating the ombre effect.
  4. Garnish and Serve: Add fresh mint leaves, lemon slices, and a few whole berries on top. Serve immediately and enjoy.

Notes

Let the berry syrup cool completely before layering to achieve distinct ombre layers. Pour syrup slowly over the back of a spoon to prevent mixing. Using frozen berries can enhance color depth. The syrup can be made a day ahead to deepen flavor. Store lemonade base and syrup separately in airtight containers in the fridge for up to 3 days. Reheating syrup is not recommended; gently warm if too thick and cool again.
