  • 1 cup (240 ml) pineapple juice (fresh or canned)
  • ยฝ cup (120 ml) full-fat canned coconut milk
  • 2 oz (60 ml) white rum (optional, omit for mocktail)
  • 1 oz (30 ml) freshly squeezed lime juice
  • 1 tbsp (15 ml) simple syrup
  • Crushed ice (as needed)
  • Pineapple wedge or lime wheel (for garnish)
  • Mint leaves (optional, a few sprigs)

Instructions

  1. Chill your serving glass in the freezer for about 10 minutes.
  2. In a cocktail shaker, combine pineapple juice, coconut milk, white rum (if using), lime juice, and simple syrup.
  3. Fill the shaker halfway with crushed ice and secure the lid tightly.
  4. Shake vigorously for about 15 seconds until well chilled and slightly frothy.
  5. Strain the cocktail into the chilled glass, keeping out pulp and ice chunks.
  6. Garnish with a pineapple wedge or lime wheel and a sprig of fresh mint if desired.
  7. Serve immediately and enjoy.

Notes

Use fresh lime juice for best flavor. Full-fat canned coconut milk provides the best creamy texture. Shake just enough to chill without over-shaking to prevent coconut milk separation. For a mocktail, omit rum and add sparkling water or lemon-lime soda. Crush ice finely to avoid quick dilution. Garnishes add aroma and presentation appeal.
