Refreshing Passion Fruit Iced Tea

A quick and easy tropical iced tea recipe combining fresh passion fruit pulp with robust black tea for a refreshing and flavorful drink perfect for any occasion.

  • 4 teaspoons loose black tea or 4 black tea bags (Assam or Darjeeling preferred)
  • Pulp from 45 ripe passion fruits
  • 4 cups (1 liter) water for brewing tea
  • 2 cups (500 ml) cold water for dilution
  • 23 tablespoons sugar or honey (adjust to taste)
  • 1 tablespoon fresh lemon juice (optional)
  • Ice cubes as needed
  • A small handful of fresh mint leaves (optional)

Instructions

  1. Bring 4 cups (1 liter) of fresh water to a rolling boil (about 5-7 minutes).
  2. Place 4 teaspoons of loose black tea or 4 tea bags into a heatproof container. Pour boiling water over the tea and cover. Steep for 5 minutes for bold flavor or 3-4 minutes for lighter taste.
  3. Remove tea bags or strain out loose tea leaves to avoid bitterness.
  4. While tea is still warm, stir in 2-3 tablespoons of sugar or honey until fully dissolved.
  5. Cut passion fruits in half and scoop out the pulp with seeds into a bowl. Optionally pulse in a blender for smoother texture.
  6. Add passion fruit pulp directly into the sweetened tea and stir gently to combine.
  7. Pour in 2 cups (500 ml) cold water to dilute and cool the mixture. Transfer to a large pitcher and refrigerate for at least 1 hour.
  8. Serve over ice cubes, add a splash of fresh lemon juice if desired, and garnish with fresh mint leaves.

Notes

Avoid over-steeping tea to prevent bitterness. Sweeten while tea is warm for better dissolution. Seeds in passion fruit pulp are edible and add texture but can be blended for smoothness. Chill tea for at least 1 hour for best flavor. Adjust sweetness and dilution to taste. Use frozen passion fruit pulp if fresh is unavailable.
