A bright, bubbly, and tangy summer drink combining fresh lemon juice and passion fruit pulp with sparkling water for a refreshing tropical twist.

  • 4 large fresh lemons, juiced (about 1 cup or 240 ml lemon juice)
  • 45 ripe passion fruits, pulp scooped out (about 1/2 cup or 120 ml pulp)
  • 1/2 cup (100 g) granulated sugar (can substitute honey or agave syrup)
  • 1 cup (240 ml) warm water (to dissolve sugar for simple syrup)
  • 3 cups (720 ml) chilled sparkling water or club soda
  • Ice cubes as needed
  • Fresh mint leaves or lemon slices for garnish (optional)

Instructions

  1. Make the simple syrup by combining 1/2 cup sugar and 1 cup warm water in a small saucepan. Stir over low heat until sugar dissolves completely (3-5 minutes). Remove from heat and let cool.
  2. Juice the lemons until you have about 1 cup fresh lemon juice. Strain to remove seeds and pulp for a smooth texture.
  3. Cut passion fruits in half and scoop out the pulp. Strain through a fine mesh sieve to remove seeds if desired, aiming for about 1/2 cup pulp.
  4. In a large pitcher, combine the cooled simple syrup, fresh lemon juice, and passion fruit pulp. Stir well to blend flavors.
  5. Slowly add 3 cups chilled sparkling water or club soda to the pitcher. Stir gently to keep the bubbles intact.
  6. Serve immediately over ice cubes, garnished with fresh mint leaves or lemon slices if desired.

Notes

Use fresh passion fruit pulp rather than syrup for best flavor. Chill all ingredients beforehand to maintain fizz. Add sparkling water just before serving and stir gently to preserve bubbles. Simple syrup should not be boiled too long to avoid thickening. You can prepare the lemon-passion fruit syrup base ahead and refrigerate for up to 2 days, adding sparkling water only before serving.
