A light and bubbly coconut water mocktail layered with fresh berries and sparkling water, perfect for summer celebrations and backyard barbecues.

  • 2 cups (480 ml) natural, unsweetened coconut water
  • 1 cup fresh strawberries, hulled and halved (or frozen)
  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons (30 ml) freshly squeezed lime juice
  • 2 tablespoons (30 ml) simple syrup (optional)
  • 1 cup (240 ml) sparkling water, plain or lightly flavored
  • Ice cubes, as needed
  • Fresh mint leaves, a small handful (optional)

Instructions

  1. Place the strawberries and blueberries in a mixing pitcher. Use a muddler or wooden spoon to gently press them just enough to release some juice but not completely mash them.
  2. Pour in the freshly squeezed lime juice and simple syrup. Stir gently to combine with the berry juices. Adjust sweetness or tanginess to taste.
  3. Add the 2 cups of coconut water to the pitcher. Stir slowly to blend all flavors without disturbing the berries too much.
  4. Fill serving glasses halfway with ice cubes. Pour the berry-coconut mixture over the ice until glasses are about three-quarters full.
  5. Top each glass with about 1 cup of sparkling water for a refreshing fizz.
  6. Garnish with fresh mint leaves and optionally a lime wedge or whole berries. Serve immediately.

Notes

Do not over-muddle the berries to avoid a thick, jam-like texture. Use fresh lime juice for best flavor. Add sparkling water last and pour gently to keep fizz. Adjust sweetness by adding or omitting simple syrup. Serve immediately to maintain bubbles and chill.
