A light and effervescent peach bellini cocktail made with fresh peaches, bubbly prosecco, and a touch of lemon juice. Perfect for warm weather and easy to prepare in just 10 minutes.

  • 2 ripe peaches, peeled and pitted
  • 1 bottle (750 ml) chilled dry or brut prosecco
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon simple syrup (optional)
  • Ice cubes (optional, for chilling glasses or blending)

Instructions

  1. Peel the peaches using a serrated knife to avoid bruising. Cut peaches in half, remove pits, and chop roughly.
  2. Place chopped peaches in a blender. Add lemon juice and simple syrup if using. Blend until smooth but not watery.
  3. Optional: Pour peach puree through a fine mesh strainer to remove pulp for a smoother texture.
  4. Ensure prosecco is well chilled, ideally refrigerated for at least two hours before use.
  5. Pour about 2 ounces (60 ml) of peach puree into each champagne flute.
  6. Slowly top off with 4 to 5 ounces (120-150 ml) of prosecco, pouring gently to preserve bubbles.
  7. Gently stir if needed to combine, keeping the fizz alive.
  8. Garnish with a thin peach slice on the rim of the glass if desired.
  9. Serve immediately while prosecco is bubbly and peach flavor is fresh.

Notes

Use ripe, fragrant peaches for best flavor. Avoid over-blending to keep puree silky and not watery. Chill prosecco and glasses well to preserve bubbles. Straining puree is optional but improves texture. Simple syrup is optional depending on peach sweetness. For a slushier drink, blend with ice. Store peach puree separately in fridge up to 2 days; add prosecco just before serving.
