Refreshing Peach Bellini Popsicles

A simple, elegant summer treat combining fresh peach puree with bubbly prosecco for a refreshing and sophisticated popsicle.

  • 3 medium fresh peaches, peeled and pitted
  • 1 cup (240 ml) prosecco, dry or extra dry
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) water
  • Optional: fresh mint leaves for garnish or blending

Instructions

  1. Prepare the peaches by peeling and pitting about 3 medium fresh peaches. For easier peeling, blanch in boiling water for 30 seconds then plunge into ice water.
  2. Place peeled peaches in a blender or food processor with 1/4 cup water and puree until silky smooth, about 1-2 minutes. Optionally strain through a fine mesh sieve for a smoother texture.
  3. Transfer peach puree to a mixing bowl. Stir in 2 tablespoons honey or agave syrup and 1 tablespoon fresh lemon juice. Adjust sweetness and acidity to taste.
  4. Gently fold in 1 cup chilled prosecco, being careful not to stir vigorously to preserve bubbles.
  5. Pour the mixture into popsicle molds, leaving some room at the top. Optionally add a small mint leaf inside each mold.
  6. Insert sticks and freeze for at least 6 hours or overnight until firm.
  7. To unmold, run warm water briefly over the outside of the molds and serve immediately.

Notes

Use ripe, fragrant peaches for best flavor. To keep prosecco bubbles, fold in gently and add a splash more prosecco before filling molds if fizz is lost. Frozen peaches can be used if fresh are unavailable. For non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Popsicles can be stored up to 2 weeks in an airtight container in the freezer.
