A bright and bubbly peach bellini made with fresh peach puree and sparkling wine, perfect for brunch or celebrations. This easy recipe captures the essence of summer in a glass with natural sweetness and a silky texture.

  • 3 medium fresh ripe peaches, peeled and pitted
  • 1 tablespoon fresh lemon juice
  • 1 to 2 teaspoons sugar or honey
  • 1 bottle (750 ml) chilled sparkling wine or prosecco
  • Ice cubes (optional)

Instructions

  1. Prepare the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water to loosen skins. Peel, pit, and roughly chop the peaches.
  2. Add chopped peaches, lemon juice, and sugar or honey to a blender. Pulse until smooth but still slightly textured.
  3. Optionally chill the puree in the fridge for 10-15 minutes for a colder drink.
  4. Chill champagne flutes or tall glasses in the fridge or freezer for about 10 minutes.
  5. Spoon about 2 tablespoons (30 ml) of peach puree into each glass.
  6. Slowly pour 4 to 5 ounces (120 to 150 ml) of chilled sparkling wine over the puree.
  7. Garnish with a thin peach slice or a sprig of mint if desired and serve immediately.

Notes

Pour sparkling wine slowly to preserve bubbles. Avoid overblending the puree to keep some texture. Chill glasses and puree for best results. Leftover puree can be stored in the fridge for up to 2 days. For a non-alcoholic version, substitute sparkling wine with sparkling water or lemon-lime soda.
