Refreshing Peach Bourbon Lemonade Recipe with Rosemary Syrup

A refreshing summer cocktail blending fresh peaches, bourbon, lemon juice, and rosemary simple syrup for a balanced, fruity, and herbal drink perfect for warm evenings.

  • 2 large ripe peaches, peeled and sliced
  • 3 medium lemons, juiced (about ยฝ cup or 120 ml fresh lemon juice)
  • ยพ cup (180 ml) good quality bourbon
  • 34 sprigs fresh rosemary
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water
  • Club soda or sparkling water, to top off
  • Ice cubes, plenty

Instructions

  1. Make the Rosemary Simple Syrup: Combine 1 cup sugar, 1 cup water, and 3-4 sprigs of fresh rosemary in a medium saucepan. Bring to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves completely. Let it simmer for 5 minutes to infuse the rosemary flavor, then remove from heat and cool to room temperature. Strain out the rosemary sprigs before using.
  2. Prepare the Peaches: Peel and slice 2 large ripe peaches. Place the slices in a mixing pitcher or large jar. Using a muddler or the back of a wooden spoon, gently press the peaches to release their juices without turning them into mush.
  3. Juice the Lemons: Squeeze 3 medium lemons to get about ยฝ cup fresh lemon juice. Strain out seeds and add the lemon juice to the peaches in the pitcher.
  4. Add Bourbon and Syrup: Pour in ยพ cup bourbon and ยพ cup of the cooled rosemary simple syrup. Stir gently to combine all the flavors. Taste and adjust sweetness if needed by adding more syrup or lemon juice.
  5. Chill and Serve: Fill glasses with ice cubes. Pour the peach bourbon lemonade over the ice, filling each glass about ยพ full. Top with club soda or sparkling water to add fizz. Garnish with a lemon wheel and a sprig of rosemary if desired.

Notes

Make the rosemary simple syrup ahead and store in the fridge for up to one week. Add club soda just before serving to keep fizz fresh. Use ripe peaches for best flavor. Adjust sweetness and tartness to taste. Frozen peaches can be used if fresh are unavailable. For a non-alcoholic version, omit bourbon and add extra rosemary syrup and vanilla extract.
