A refreshing summer drink combining black tea, fresh peaches, bourbon, and a caramelized brown sugar rim for a perfect balance of sweet, boozy warmth and fresh peach brightness.

  • 45 black tea bags
  • 2 medium fresh ripe peaches, sliced
  • 1/2 cup (120 ml) bourbon
  • 1/4 cup (50 g) brown sugar (for rim and sweetening)
  • 1/4 cup (50 g) granulated sugar
  • 2 tablespoons (30 ml) fresh lemon juice
  • 4 cups (950 ml) cold water
  • Ice cubes
  • Optional garnish: peach slices and fresh mint leaves
  • Water or lemon juice (to wet glass rims)

Instructions

  1. Bring 4 cups (950 ml) of water to a boil. Remove from heat and add 4-5 black tea bags. Steep for 5-7 minutes depending on desired strength. Remove and discard tea bags.
  2. While the tea is still warm, stir in 1/4 cup (50 g) granulated sugar until fully dissolved.
  3. Slice 2 medium ripe peaches and place them in a pitcher. Gently mash the peaches with a muddler or the back of a wooden spoon to release juices without pureeing.
  4. Pour the sweetened tea over the peaches in the pitcher. Add 1/2 cup (120 ml) bourbon and 2 tablespoons (30 ml) fresh lemon juice. Stir gently to combine.
  5. Refrigerate the peach bourbon sweet tea for at least 1 hour to chill and let flavors meld.
  6. In a shallow bowl, pour 1/4 cup (50 g) brown sugar. Lightly wet the rim of each glass with water or lemon juice, then dip the rim into the brown sugar, pressing gently to coat evenly.
  7. Fill the rimmed glasses with ice cubes, then pour the chilled peach bourbon sweet tea over the ice. Garnish with a peach slice and a sprig of fresh mint if desired.

Notes

For a smoother drink, strain tea through a fine mesh sieve before chilling to remove peach pulp. Avoid over-muddling peaches to prevent gummy texture. Adjust sweetness and bourbon level to taste. Brown sugar rim sticks best when glass rims are lightly wetted but not soaked. Can omit bourbon for a non-alcoholic version and add peach syrup or juice instead. For fizz, add a splash of soda water before serving.
