A quick and easy cocktail made with ripe peach, floral elderflower cordial, and crisp Prosecco. Perfect for hot summer days, this spritz comes together in just 5 minutes and is a refreshing, elegant crowd-pleaser.

Ingredients

Scale
  • 1 medium ripe peach, sliced
  • 1 oz (30 ml) elderflower cordial
  • 4 oz (120 ml) Prosecco or dry sparkling wine (Brut or Extra Brut)
  • 2 oz (60 ml) sparkling water or club soda
  • Ice cubes
  • Fresh mint sprigs for garnish (optional)
  • ½ oz (15 ml) fresh lemon juice (optional)

Instructions

  1. Wash the peach and slice into thin wedges, about ¼-inch thick. Set aside a couple of slices for garnish.
  2. Place 2-3 peach slices at the bottom of a wine glass or highball glass. Add 1 oz elderflower cordial and optional lemon juice. Gently press the peach slices with the back of a spoon once or twice to release juice (do not over-muddle).
  3. Fill the glass completely with ice cubes.
  4. Slowly pour 4 oz chilled Prosecco over the ice to preserve bubbles.
  5. Top with 2 oz sparkling water, pouring gently.
  6. Stir very gently with a bar spoon or long spoon for 2-3 rotations to combine without losing carbonation.
  7. Garnish with reserved peach slice and a fresh mint sprig. Serve immediately.

Notes

Chill all ingredients and glasses for at least 30 minutes before making. Use a dry Brut Prosecco to balance sweetness. Do not over-muddle the peach. Make each glass individually right before serving to preserve bubbles. For a non-alcoholic version, replace Prosecco with more sparkling water or non-alcoholic sparkling wine.
