  • 3 medium ripe peaches, peeled and sliced
  • 4 large lemons, juiced (about 3/4 cup or 180 ml fresh juice)
  • 3/4 cup (150 g) granulated sugar
  • 1 cup (240 ml) water
  • 2 tbsp culinary lavender buds (food grade)
  • 4 cups (960 ml) cold water or sparkling water
  • Ice cubes as needed
  • Optional garnishes: fresh lavender sprigs, peach slices, lemon wheels

Instructions

  1. Make the Lavender Simple Syrup: Combine 3/4 cup granulated sugar, 1 cup water, and 2 tablespoons culinary lavender buds in a saucepan. Heat over medium until sugar dissolves, stirring occasionally. Once it simmers, reduce heat and let it steep for 5 minutes. Remove from heat, strain out lavender buds, and let syrup cool to room temperature.
  2. Prepare the Peaches: Peel and slice 3 ripe peaches. To peel easily, score an X on the bottom of each peach, blanch in boiling water for 30 seconds, then transfer to ice waterโ€”skins will slip right off. Blend the peeled peaches in a blender or food processor until smooth but still slightly textured, about 30 seconds.
  3. Juice the Lemons: Juice 4 large lemons until you have about 3/4 cup (180 ml). Strain seeds.
  4. Mix the Mocktail: In a large pitcher, combine the peach puree, lemon juice, and cooled lavender syrup. Stir well to combine. Add 4 cups (960 ml) cold water or sparkling water, and mix gently. Taste and adjust sweetness or tartness by adding more syrup or lemon juice if needed.
  5. Serve: Fill glasses with ice cubes, pour the peach lavender lemonade over, and garnish with peach slices or lavender sprigs if desired. Serve immediately for best freshness.

Notes

Use culinary lavender buds only, avoid ornamental lavender. Adjust sweetness after mixing. Add sparkling water just before serving to keep fizz. Peeling peaches is important for smooth texture. Syrup can be made ahead and refrigerated. Store leftover lemonade in refrigerator up to 2 days. Frozen peaches can be used if thawed and drained.
