  • 1 ripe peach, peeled and pureed (about 2 tablespoons or 30 ml peach puree)
  • 3/4 oz (22 ml) freshly squeezed lemon juice
  • 1/2 oz (15 ml) simple syrup (equal parts sugar and water)
  • 1 large egg white (optional, for frothy texture)
  • Ice (for shaking and serving)
  • Peach slices or lemon twist (for garnish)

Instructions

  1. Peel the ripe peach by blanching in boiling water, then cut into chunks and puree in a blender or mash finely with a muddler until smooth to yield about 2 tablespoons (30 ml) of peach puree.
  2. Roll the lemon on the countertop, cut in half, and squeeze out 3/4 oz (22 ml) of fresh lemon juice.
  3. Using a jigger, pour 2 oz (60 ml) bourbon or rye whiskey into a cocktail shaker. Add 1/2 oz (15 ml) simple syrup.
  4. Add the peach puree and crack one egg white into the shaker (optional).
  5. Seal the shaker and dry shake vigorously without ice for about 15 seconds to emulsify the egg white and peach puree.
  6. Add ice cubes to fill the shaker halfway, seal, and shake hard for another 20 seconds until the shaker feels frosty.
  7. Strain the cocktail into a chilled old-fashioned or rocks glass filled with fresh ice using a fine mesh strainer.
  8. Garnish with a thin slice of fresh peach or a twist of lemon zest on the rim.

Notes

Use fresh lemon juice for best flavor; bottled lemon juice is not recommended. Dry shake before adding ice if using egg white to create a frothy texture. Chill glassware in the freezer for 10 minutes before serving to keep the cocktail cold longer. Adjust sweetness with simple syrup or lemon juice to taste. Substitute agave syrup or honey for simple syrup if desired. Egg white can be omitted or replaced with aquafaba for a vegan option. Fresh peaches are preferred over frozen or canned for best flavor.
