Refreshing Pineapple Coconut Water Cooler

A quick and easy tropical drink blending fresh pineapple and coconut water for a hydrating, naturally sweet summer refreshment.

Ingredients

  • 2 cups fresh pineapple, peeled and chopped (or frozen pineapple chunks)
  • 2 cups coconut water, preferably natural and unsweetened
  • Juice of 1 medium lime
  • 12 tablespoons honey or agave syrup (optional)
  • A handful of fresh mint leaves, torn or lightly muddled
  • Ice cubes as needed
  • Pinch of sea salt (optional)

Instructions

  1. Peel and chop about 2 cups of fresh pineapple into chunks. If using frozen pineapple, let it thaw slightly for easier blending.
  2. Add the chopped pineapple to a blender and pulse until smooth but still slightly textured. Add a splash of coconut water if needed to help blend.
  3. Cut one medium lime in half and squeeze out fresh juice using a citrus juicer, avoiding seeds.
  4. Pour the pineapple puree into a large pitcher. Add 2 cups of chilled coconut water, fresh lime juice, and honey or agave syrup if using. Stir gently until well mixed.
  5. Tear a handful of fresh mint leaves and add them to the pitcher. Fill with ice cubes to chill and stir again.
  6. Taste and adjust sweetness or thickness by adding more honey or coconut water as desired. Add extra lime juice for brightness if preferred.
  7. Serve immediately in tall glasses, garnished with a mint sprig or thin pineapple slice.

Notes

Use ripe pineapple for best flavor. Adding a splash of coconut water while blending helps achieve a smooth texture. Muddle mint lightly to release oils without overpowering. Add ice just before serving to avoid dilution. For a chilled drink without watering down, freeze pineapple chunks to use as ice cubes.
