Refreshing Pink Butterfly Pea Lemonade

A visually stunning and refreshing homemade lemonade that magically changes color from blue to pink when lemon juice is added, perfect for summer.

Ingredients

  • 1 tablespoon dried butterfly pea flowers
  • 4 cups water
  • 34 medium fresh lemons (about 1 cup or 240 ml lemon juice)
  • 1/3 to 1/2 cup granulated sugar (adjust to taste; can substitute with honey, agave syrup, or sugar alternative)
  • Ice cubes as needed
  • 1 cup sparkling water (optional)
  • Fresh mint leaves or lemon slices for garnish (optional)

Instructions

  1. Bring 4 cups (950 ml) of water to a boil. Remove from heat and add 1 tablespoon of dried butterfly pea flowers. Let steep for 8-10 minutes until the water turns deep blue.
  2. Strain the tea through a fine mesh strainer into a heatproof pitcher, removing the flowers. Set aside to cool slightly.
  3. While the tea is still warm, stir in 1/3 to 1/2 cup granulated sugar until dissolved. If using honey or alternative sweeteners, wait until tea cools to room temperature before adding.
  4. Squeeze fresh lemons to yield about 1 cup (240 ml) lemon juice. Strain out seeds and pulp if desired.
  5. Slowly pour lemon juice into the butterfly pea tea and stir gently. Watch the color change from blue to pink or purple.
  6. Add ice cubes to chill. For a fizzy version, stir in 1 cup chilled sparkling water just before serving.
  7. Garnish with fresh mint leaves or lemon slices and serve immediately.

Notes

Do not steep butterfly pea flowers longer than 15 minutes to avoid bitterness. Use fresh lemon juice for best color change and flavor. Sweeten while tea is warm for granulated sugar; wait for cooling if using honey or alternative sweeteners. Add sparkling water just before serving for fizz. Store leftovers in the refrigerator for up to 2 days; color may deepen but flavor remains bright.
