  • 1 cup (125g) fresh raspberries
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • 1 bottle (750ml) chilled sparkling wine or Champagne (Brut style recommended)
  • Optional: sparkling water for a non-alcoholic version
  • Fresh mint leaves for garnish

Instructions

  1. Make the Raspberry Purรฉe: In a blender or food processor, combine 1 cup (125g) fresh raspberries, 2 tablespoons (25g) granulated sugar, and 1 tablespoon (15ml) freshly squeezed lemon juice. Blend until smooth, about 20 seconds. If desired, press the purรฉe through a fine mesh sieve into a bowl to remove seeds.
  2. Chill the Purรฉe: Place the raspberry purรฉe in the refrigerator for at least 15 minutes to let the flavors meld and keep it cold for mixing.
  3. Prepare Glasses: Chill your champagne flutes or tall glasses in the fridge for 10 minutes before serving.
  4. Assemble the Bellinis: Pour about 2 tablespoons (30ml) of raspberry purรฉe into the bottom of each glass.
  5. Add the Sparkle: Slowly top each glass with 4 to 5 ounces (120-150ml) of chilled sparkling wine or sparkling water, pouring gently to keep the bubbles lively and avoid overflow.
  6. Garnish and Serve: Drop a fresh raspberry and a small sprig of mint into each glass. Serve immediately while bubbly.

Notes

Use fresh raspberries for best flavor; frozen can be used but thaw and drain excess liquid first. Strain purรฉe for a smoother texture. Keep purรฉe and sparkling wine chilled to maintain bubbles. Pour sparkling wine slowly at an angle to avoid foam. Add simple syrup if sparkling wine is extra dry. Prepare purรฉe up to 48 hours ahead but add sparkling wine just before serving.
