A light, crisp, and refreshingly vibrant non-alcoholic mocktail featuring fresh raspberries, mint, lime juice, and sparkling cider. Perfect for spontaneous gatherings or anytime you want a bubbly, festive drink without alcohol.

  • ยฝ cup fresh raspberries (about 75 grams), gently washed
  • 8 to 10 fresh mint leaves, washed and patted dry
  • 1 cup (8 fl oz) non-alcoholic sparkling champagne or cider, chilled
  • 1 tablespoon (0.5 fl oz) fresh lime juice, freshly squeezed
  • 1 teaspoon (0.17 fl oz) simple syrup, optional
  • Ice cubes, as needed

Instructions

  1. Place the fresh mint leaves and raspberries into your mixing glass. Using a muddler or the back of a wooden spoon, gently press down and twist to release the mint oils and raspberry juice without pulverizing into a pulp. This should take about 1-2 minutes.
  2. Pour in the freshly squeezed lime juice and simple syrup (if using). Stir gently to combine with the muddled fruit and mint. This step takes about 30 seconds.
  3. Fill the glass halfway with ice cubes to chill without diluting the flavor too quickly. This takes about 1-2 minutes.
  4. Slowly pour the chilled non-alcoholic sparkling champagne or cider over the ice to fill the glass, preserving the bubbles. This takes less than a minute.
  5. Give the drink a gentle stir to combine, then garnish with a sprig of fresh mint and a few whole raspberries on top. Serve immediately.

Notes

For a clearer drink, strain the muddled mixture before adding ice and sparkling beverage. Slap mint leaves between palms before muddling for extra aroma. Use fresh lime juice for best brightness. Pour sparkling beverage slowly down the side of the glass to preserve bubbles. Adjust sweetness with simple syrup or honey/agave as preferred. Chilling glasses beforehand keeps the drink crisp longer.
