A bright, bubbly, and refreshing cocktail combining zesty lemon, fresh raspberries, limoncello, and crisp prosecco, perfect for summer parties and easy to make at home.

Ingredients

  • 3 oz (90 ml) limoncello
  • 1 bottle (750 ml) chilled brut prosecco
  • 1 cup (125 g) fresh or frozen raspberries
  • 2 tbsp (30 ml) fresh lemon juice
  • 1 tbsp (15 ml) simple syrup (optional)
  • Fresh mint leaves (for garnish)
  • Lemon slices or rind twists (for garnish)

Instructions

  1. In a large pitcher, add 1 cup (125 g) of fresh or frozen raspberries. Use a muddler or the back of a spoon to gently crush them, just enough to release their juices but not turn them into a puree (about 1-2 minutes).
  2. Pour 3 oz (90 ml) of limoncello over the muddled raspberries. Stir gently to combine.
  3. Squeeze 2 tablespoons (30 ml) of fresh lemon juice into the pitcher. Stir again.
  4. Taste the mixture. If raspberries arenโ€™t sweet enough, add up to 1 tablespoon (15 ml) simple syrup and stir to blend.
  5. Place the pitcher in the fridge for 15-20 minutes to chill and let flavors marry (optional but recommended).
  6. Just before serving, slowly pour in 1 bottle (750 ml) of chilled brut prosecco. Stir gently to combine, taking care not to lose too much fizz.
  7. Pour the cocktail into champagne flutes or stemless glasses. Garnish each with fresh mint leaves and a lemon slice or rind twist. Serve immediately.

Notes

Do not muddle raspberries too much to avoid cloudiness and overly pulpy texture. Chill all ingredients and glasses to preserve bubbles. Add prosecco last and stir gently to keep fizz. Prepare raspberry-limoncello base ahead and add prosecco just before serving for best results.
