- 2 ounces limoncello per serving
- 3 ounces prosecco or other sparkling wine (dry or extra dry)
- 2 ounces sparkling water (plain or lightly flavored lemon)
- 1/2 teaspoon fresh lemon juice per glass
- 1/2 teaspoon simple syrup (optional)
- Ice cubes
- Fresh mint leaves (optional, for garnish)
- Lemon slices or twists (for garnish)
Instructions
- Wash about 1/4 cup of fresh raspberries per serving; if frozen, thaw slightly and place in a mixing glass or pitcher.
- Gently muddle the raspberries using a muddler or the back of a spoon to release juices without pulverizing.
- Add 1/2 teaspoon fresh lemon juice and 1/2 teaspoon simple syrup (optional) to the muddled berries and stir gently to combine.
- Pour in 2 ounces of limoncello and stir gently to marry the flavors.
- Fill a serving glass with plenty of ice cubes.
- Strain or pour the berry-limoncello mixture into the glass (pouring with berries for rustic look or straining for smoothness).
- Top off with 3 ounces of chilled prosecco, pouring slowly to preserve bubbles.
- Add about 2 ounces of sparkling water to lighten and lengthen the drink.
- Garnish with a few fresh raspberries, a lemon slice or twist, and optionally a sprig of fresh mint.
- Serve immediately to enjoy the fresh bubbles and flavors.

Gently muddle raspberries to avoid bitterness from seeds. Keep all ingredients chilled before mixing to preserve bubbles. Pour prosecco and sparkling water slowly and avoid vigorous stirring after adding bubbles.
