A quick and easy sparkling punch combining fresh raspberries and white peaches with a hint of mint and lemon juice, perfect for summer gatherings and refreshing moments.

  • 3 ripe white peaches, peeled and thinly sliced
  • 1 cup fresh or frozen raspberries
  • 4 cups (32 fl oz) plain or lightly flavored sparkling water
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons honey or agave syrup
  • A small handful of fresh mint leaves, roughly torn
  • Ice cubes as needed for serving

Instructions

  1. Peel the white peaches using a paring knife, then slice them thinly about 1/4 inch thick. If using frozen raspberries, let them thaw slightly.
  2. Place the peach slices and raspberries in a large pitcher. Add honey (or agave) and lemon juice. Gently muddle with a muddler or back of a spoon for 1-2 minutes to crush a few raspberries and release their juices.
  3. Add the torn fresh mint leaves and gently stir to mix.
  4. Cover the pitcher and refrigerate for 15-20 minutes to let the flavors meld.
  5. Just before serving, add the sparkling water to the pitcher and stir gently to combine, avoiding vigorous stirring to keep bubbles intact.
  6. Fill glasses with ice cubes and pour the punch over. Garnish with whole raspberries, a peach slice, and a mint sprig if desired.

Notes

Use ripe but firm peaches for best flavor and texture. Gently muddle fruit to release juices without pulverizing. Chill sparkling water before adding to keep bubbles lively. Add sparkling water just before serving to maintain fizz. Optional: add a splash of vodka or gin for an alcoholic version. Frozen fruit works well but thaw slightly first. For less sweetness, reduce honey to 1 tablespoon or omit.
