A quick and easy homemade summer drink featuring vibrant layers of strawberry syrup, creamy half & half, and blue raspberry syrup, perfect for cooling off and festive occasions.

  • Fresh strawberries, sliced (optional, for garnish or muddling)
  • 1/4 cup half & half or heavy cream
  • 1 tbsp simple syrup (homemade or store-bought)
  • 2 tbsp blue raspberry syrup
  • Fresh blueberries (optional for texture and garnish)
  • 1 cup club soda or sparkling water, chilled
  • Ice cubes as needed
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the simple syrup if making homemade by combining equal parts sugar and water (e.g., 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat over medium, stirring until sugar dissolves. Cool completely before use.
  2. Fill a tall glass about 3/4 full with ice cubes.
  3. Pour 2 tablespoons of strawberry syrup gently over the ice. Optionally, muddle fresh strawberries at the bottom before adding syrup for extra flavor.
  4. Slowly add about 1/3 cup (80 ml) of chilled club soda over the strawberry syrup, pouring gently to avoid mixing layers.
  5. In a small bowl or pitcher, mix 1/4 cup (60 ml) half & half with 1 tablespoon simple syrup. Stir until combined.
  6. Slowly pour the cream mixture over the back of a spoon onto the soda to create a distinct white layer.
  7. Add 2 tablespoons of blue raspberry syrup over the cream layer, followed by another 1/3 cup (80 ml) of club soda. Pour gently.
  8. Garnish with fresh blueberries and a sprig of mint if desired. Add a striped straw for a festive touch.
  9. Enjoy by sipping slowly to taste the layers separately or stir together for a sweet, fizzy treat.

Notes

Pour liquids slowly over the back of a spoon to keep layers distinct. Chill all ingredients beforehand for best results. For dairy-free, substitute half & half with coconut or almond milk creamers. Syrups can be homemade or store-bought. Prepare syrups ahead and store in fridge up to two weeks. Serve immediately for best fizz and layering.
