A bright, thirst-quenching homemade summer drink combining tangy rhubarb, sweet strawberries, and fresh lemon juice. Perfect for picnics, backyard barbecues, or a refreshing treat on hot days.

  • 3 cups (450 grams) rhubarb stalks, chopped
  • 2 cups (300 grams) fresh strawberries, hulled and halved
  • 1 cup (200 grams) granulated sugar
  • 1 cup (240 ml) fresh lemon juice (about 46 lemons)
  • 4 cups (1 liter) cold water
  • Ice cubes, for serving
  • Optional: Fresh mint leaves for garnish

Instructions

  1. Prepare the fruit: Wash and chop the rhubarb into 1-inch pieces. Hull and halve the strawberries.
  2. Simmer the fruit and sugar: In a large saucepan, combine chopped rhubarb, strawberries, granulated sugar, and 2 cups (480 ml) of water. Bring to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
  3. Cook until soft: Let the mixture simmer for about 10 minutes or until the fruit is tender and the liquid turns deep pink.
  4. Strain the syrup: Remove from heat and strain the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher, pressing gently to extract as much liquid as possible.
  5. Add lemon juice and water: Stir in the fresh lemon juice, then add the remaining 2 cups (480 ml) of cold water. Taste and adjust sweetness or tartness as desired.
  6. Chill and serve: Refrigerate for at least 1 hour. Serve over ice cubes and garnish with fresh mint leaves if desired.

Notes

For a bubbly twist, add sparkling water just before serving. Use organic rhubarb and strawberries for brighter flavor. Adjust sugar to taste or substitute with honey or maple syrup after syrup cools. Frozen fruit can be used if thawed first. Chill glasses for a frosty serving experience.
