  • 34 sprigs fresh rosemary (washed and bruised)
  • 1 cup granulated sugar (can substitute honey or maple syrup)
  • 1 cup apple cider vinegar (raw, unfiltered preferred)
  • ยฝ cup fresh lemon juice (about 23 lemons)
  • Cold sparkling water (to top off the drink)
  • Ice cubes (optional, for serving)

Instructions

  1. Juice the grapefruits and lemons using a juicer or reamer until you have 1 cup grapefruit juice and ยฝ cup lemon juice. Remove any seeds. (10 minutes)
  2. Make the rosemary syrup: In a medium saucepan, combine 1 cup granulated sugar with 1 cup water. Add 3-4 sprigs of fresh rosemary. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Let simmer for about 5 minutes to infuse rosemary. Remove from heat and cool completely. (15 minutes)
  3. Strain the syrup to remove rosemary sprigs for a smooth syrup. Pour syrup into a large jar or bowl. (5 minutes)
  4. Combine juice and vinegar: Add fresh grapefruit juice and 1 cup apple cider vinegar to the rosemary syrup, stirring gently to combine. This creates the shrub syrup base. (5 minutes)
  5. Refrigerate the shrub syrup for at least 4 hours, ideally overnight, to mellow the vinegar and develop flavors.
  6. To serve, fill a glass with ice cubes. Pour 2-3 tablespoons of shrub syrup over the ice, then top with about 1 cup (240 ml) cold sparkling water. Stir gently and adjust syrup quantity to taste. (2 minutes)
