  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • A drop of natural blue food coloring (optional)
  • 1/4 cup (60ml) fresh lemon juice (from about 2 medium lemons)
  • 4 cups (960ml) chilled sparkling water
  • Ice cubes
  • Optional garnishes: fresh raspberries, lemon slices, sprig of mint

Instructions

  1. Make the Blue Raspberry Syrup: Combine raspberries, sugar, and water in a saucepan. Heat over medium, stirring occasionally until sugar dissolves and raspberries break down (about 5-7 minutes). Strain through a fine-mesh sieve, pressing to extract juice. Add a drop of natural blue food coloring if desired. Let cool completely.
  2. Prepare Fresh Lemon Juice: Juice 2 medium lemons to yield about 1/4 cup (60ml) fresh lemon juice. Strain out seeds and pulp for a smooth finish.
  3. Combine Ingredients: In a large pitcher, mix 1/2 cup (120ml) of the cooled blue raspberry syrup with the fresh lemon juice. Stir gently.
  4. Add Sparkling Water: Pour in 4 cups (960ml) chilled sparkling water slowly to keep the bubbles. Stir gently to combine.
  5. Serve: Fill glasses with ice cubes, pour the mocktail over, and garnish with fresh raspberries or lemon slices. Serve immediately for best fizz.

Notes

Make the syrup ahead and refrigerate for up to one week. Add sparkling water just before serving to preserve fizz. Stir gently to keep bubbles. Use fresh lemon juice for best flavor.
