  • 1 cup granulated sugar (200 g)
  • 2 tablespoons dried culinary lavender buds
  • 1 cup freshly squeezed lemon juice (about 46 large lemons)
  • 1 pint fresh blueberries (about 2 cups / 300 g)
  • 1/4 cup fresh mint leaves (about 1520 leaves), washed and gently bruised
  • 3 cups cold sparkling water (720 ml)
  • Ice cubes for serving
  • Optional garnishes: lemon slices, extra mint sprigs, blueberries on skewers or toothpicks

Instructions

  1. Make the Lavender Syrup: In a small saucepan, combine 1 cup water and 1 cup sugar. Bring to a gentle boil over medium heat, stirring until sugar dissolves. Remove from heat, add the dried lavender buds, and cover. Let steep for 10 minutes. Strain the syrup through a fine mesh sieve into a clean jar or bowl, pressing gently on the lavender to extract flavor. Let cool completely.
  2. Prepare the Lemon Juice: While the syrup cools, juice 4-6 large lemons until you have about 1 cup (240 ml) of fresh lemon juice. Remove seeds, but keep pulp if you like a bit of texture.
  3. Muddle the Blueberries and Mint: In your large pitcher, add the blueberries and mint leaves. Using a muddler or the back of a wooden spoon, gently press and twist to release juices and oils without pulverizing the berries.
  4. Combine Ingredients: Add the cooled lavender syrup and fresh lemon juice to the muddled blueberries and mint. Stir well to combine. Taste and adjust sweetness or tartness if needed by adding more lavender syrup or lemon juice.
  5. Add Sparkling Water: Just before serving, pour in the cold sparkling water (3 cups / 720 ml). Stir gently to mix but keep as much fizz as possible.
  6. Serve: Fill glasses with ice cubes, pour the sparkling blueberry mint lemonade over, and garnish with lemon slices, extra mint sprigs, and a few whole blueberries. Enjoy immediately for best fizz and freshness.

Notes

Use dried lavender for the syrup to avoid bitterness. Muddle mint gently to prevent bitterness. Add sparkling water just before serving to keep fizz. The lavender syrup can be made ahead and stored in the fridge for up to 2 weeks. For a lower sugar version, reduce sugar to 3/4 cup and adjust to taste. Fresh blueberries provide better texture than frozen. Chill all ingredients for best fizz retention.
