Refreshing Sparkling Peach Lemonade with Honey and Basil

A simple and refreshing summer drink combining the sweetness of peaches, brightness of lemon, floral notes of wildflower honey, and an herbal twist from fresh basil, finished with sparkling water for a celebratory fizz.

  • 3 medium ripe peaches, peeled and sliced
  • 3 large lemons, juiced (about 1 cup or 240 ml)
  • 1/4 cup (85 g) wildflower honey
  • 10โ€“12 large fresh basil leaves, plus extra for garnish
  • 4 cups (960 ml) chilled sparkling water
  • 1 cup (240 ml) cold water
  • Ice cubes as needed

Instructions

  1. Prepare the peaches by peeling them: blanch in boiling water for 30 seconds, then transfer to ice water to loosen the skin. Slice and pit the peaches, then puree in a blender until smooth (about 30 seconds). Optionally strain through a fine mesh strainer for a pulp-free lemonade.
  2. Juice the lemons using a citrus juicer to yield about 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds.
  3. Place 10โ€“12 basil leaves in the bottom of a large pitcher. Gently muddle with a muddler or wooden spoon to release oils without shredding the leaves.
  4. In a small bowl, whisk together the wildflower honey and 1 cup (240 ml) cold water until fully dissolved to make honey syrup.
  5. Combine the peach puree, lemon juice, and honey syrup in the pitcher with the muddled basil. Stir well for about 30 seconds.
  6. Fill glasses with ice cubes or add ice to the pitcher. Slowly pour in 4 cups (960 ml) chilled sparkling water, stirring gently to preserve bubbles.
  7. Garnish each glass with fresh basil leaves or thin lemon slices and serve immediately.

Notes

If peaches are out of season, thawed frozen peaches work well. For a vegan version, substitute honey with agave nectar or maple syrup. Avoid over-muddling basil to prevent bitterness. Keep sparkling water chilled and add it last, stirring gently to maintain carbonation. For a stronger basil flavor, let muddled leaves sit in the mixture for 10-15 minutes before adding sparkling water but avoid steeping too long to prevent grassy taste.
