  • 2 medium fresh ripe pears, peeled, cored, and chopped
  • 12 tablespoons granulated sugar (optional, adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 750 ml sparkling wine (Prosecco, Champagne, or dry sparkling wine)
  • 1 ounce triple sec or orange liqueur (optional)
  • Ice cubes (optional, for chilling the pear puree)

Instructions

  1. Peel, core, and chop about 2 medium ripe pears into small pieces. Place in a blender with 1-2 tablespoons granulated sugar and 1 tablespoon fresh lemon juice. Blend on high until smooth, about 30-45 seconds. Optionally strain through a fine mesh sieve for a smoother texture.
  2. Chill the pear puree in the refrigerator for 10-15 minutes or stir in a few ice cubes to cool it down.
  3. Pour about 2 ounces (60 ml) of the chilled pear puree into each champagne flute. If using triple sec, add 1/2 ounce (15 ml) per glass and gently stir to combine.
  4. Slowly top off each glass with about 4-5 ounces (120-150 ml) of sparkling wine, pouring gently at an angle to preserve bubbles and avoid overflow.
  5. Garnish each glass with a thin pear slice or a twist of lemon peel. Serve immediately.

Notes

Use ripe pears like Bartlett or Anjou for best flavor and texture. Chill ingredients to keep bubbles intact. Pour sparkling wine slowly at an angle to reduce foam. Prepare pear puree ahead and refrigerate up to 24 hours. For a non-alcoholic version, substitute sparkling wine with sparkling water or lemon-lime soda. Optional triple sec can be replaced with elderflower liqueur for a floral twist.
