A quick and easy sparkling raspberry lemonade spritzer that is perfect for summer parties, combining fresh raspberries, lemon juice, and sparkling water for a refreshing and lively drink.

  • 1 cup fresh raspberries (125 grams)
  • 1/2 cup fresh lemon juice (120 ml, from about 34 lemons)
  • 3 cups sparkling water (720 ml)
  • 1/4 cup simple syrup (60 ml; made by dissolving 1/4 cup sugar in 1/4 cup hot water)
  • Ice cubes
  • Fresh mint leaves (optional, a few sprigs)

Instructions

  1. Puree the raspberries in a blender or food processor until smooth, about 30 seconds. Optionally, strain through a fine mesh sieve to remove seeds.
  2. Juice the lemons using a citrus juicer to get 1/2 cup fresh lemon juice, straining out any seeds.
  3. Make simple syrup by dissolving 1/4 cup sugar in 1/4 cup hot water, stirring until fully dissolved. Let cool.
  4. In a large pitcher, combine the raspberry puree, lemon juice, and simple syrup. Stir well and adjust sweetness if needed.
  5. Slowly pour in 3 cups of chilled sparkling water and stir gently to combine without losing fizz.
  6. Fill glasses with ice cubes, pour the spritzer over, and garnish with fresh mint leaves or whole raspberries if desired.

Notes

Use fresh raspberries for best flavor; frozen raspberries can be used if thawed and drained. Adjust sweetness by adding more or less simple syrup. Pour sparkling water gently to keep fizz. Prepare raspberry-lemon base ahead and add sparkling water just before serving to maintain bubbles.
