  • 4 cups (600g) cubed seedless watermelon
  • 2 large lemons, juiced (about 1/4 cup / 60 ml lemon juice)
  • 1012 fresh mint leaves, gently torn
  • 23 tablespoons sugar (adjust to taste)
  • 2 cups (475 ml) chilled sparkling water
  • 1 cup (240 ml) chilled prosecco
  • Ice cubes as needed
  • Optional: lemon slices for garnish
  • Optional: extra mint sprigs for garnish

Instructions

  1. Cube about 4 cups (600g) of seedless watermelon and gently tear 10-12 fresh mint leaves.
  2. In a blender, combine the watermelon cubes, torn mint leaves, and 2-3 tablespoons of sugar. Blend on high for about 30-45 seconds until smooth and juicy. If the mint tastes bitter, add more watermelon and blend briefly again.
  3. Optional: Pour the mixture through a fine mesh strainer into a large bowl or pitcher to remove pulp, pressing gently with a spatula.
  4. Stir in the juice of 2 large lemons (about 1/4 cup / 60 ml). Taste and adjust sugar if needed.
  5. Refrigerate the mixture for at least 30 minutes to chill and let flavors meld.
  6. Just before serving, add 2 cups (475 ml) chilled sparkling water to the pitcher and stir gently to combine without losing bubbles.
  7. Serve the lemonade over ice cubes in glasses, then top each glass with about 2-3 oz (60-90 ml) chilled prosecco.
  8. Garnish each glass with a fresh mint sprig and a thin lemon slice.

Notes

Blend mint leaves gently with watermelon to avoid bitterness. Chill the base before adding sparkling water and prosecco to keep bubbles intact. Stir gently when mixing sparkling water and prosecco to preserve fizz. Use fresh, clear ice cubes or frozen watermelon cubes to avoid dilution. For a non-alcoholic version, omit prosecco and add extra sparkling water or lemon-lime soda.
