Refreshing Spiced Nectarine Iced Tea Recipe with Cardamom Honey

  • 3 medium ripe nectarines, sliced
  • 4 cups (960 ml) brewed black or green tea, cooled
  • 3 tablespoons (60 ml) honey infused with 4-5 crushed green cardamom pods
  • 2 tablespoons (30 ml) fresh lemon juice
  • Ice cubes, as needed
  • Optional garnishes: fresh mint sprigs or thin lemon slices

Instructions

  1. Brew the tea by boiling 4 cups (960 ml) of water and steeping 4 black or green tea bags (or 2 tablespoons loose tea) for 5-7 minutes. Remove tea bags or strain leaves.
  2. If making cardamom honey fresh, gently warm 3 tablespoons (60 ml) honey with 4-5 crushed green cardamom pods over low heat for about 10 minutes without boiling. Strain out pods and set aside.
  3. Allow brewed tea to cool to room temperature (about 20-30 minutes), or speed cooling by refrigerating.
  4. Wash and slice 3 medium nectarines into thin wedges or half-moons, leaving the skin on.
  5. In a large pitcher, combine cooled tea, cardamom honey, and 2 tablespoons (30 ml) fresh lemon juice. Stir until honey dissolves completely.
  6. Gently add nectarine slices to the pitcher, pushing some below the surface. Cover and refrigerate for at least 1 hour to chill and meld flavors.
  7. Serve over ice cubes, garnished with fresh mint sprigs or lemon slices if desired.

Use ripe but firm nectarines for best texture. Avoid over-steeping tea to prevent bitterness. Warm honey gently to preserve flavor. Chill tea thoroughly for best taste. Adjust sweetness or strength by adding water or lemon juice. Store leftovers in refrigerator up to 2 days; best consumed within 24 hours for optimal fruit texture.
