Refreshing Spicy Jalapeño Watermelon Cooler Cocktail

A quick and easy summer cocktail that balances juicy sweetness of watermelon with a subtle spicy kick from jalapeño, brightened with lime and smoothed with tequila blanco.

  • 4 cups diced fresh watermelon (seedless if possible)
  • 1 medium jalapeño, sliced thinly (seeds removed for milder heat)
  • 3 tablespoons fresh lime juice (from about 2 limes)
  • 2 ounces tequila blanco per serving
  • 1 to 2 teaspoons agave syrup (or honey/simple syrup/stevia/erythritol as alternatives)
  • A small handful fresh mint leaves (optional, for muddling and garnish)
  • Ice cubes (for blending and serving)
  • Splash of club soda or sparkling water (about 2 ounces per serving)

Instructions

  1. Cut about 4 cups (600 g) of watermelon into chunks. Remove seeds if any. Blend in your blender until smooth, about 30 seconds. If you prefer less pulp, strain through a fine mesh sieve into a bowl.
  2. In your serving glass or a small mixing bowl, add 3-4 thin jalapeño slices and 5-6 fresh mint leaves. Gently muddle with a muddler or wooden spoon to release the oils and spice, but avoid over-mashing to prevent bitterness.
  3. Pour 4 ounces (120 ml) of watermelon juice into the muddled jalapeño and mint. Add fresh lime juice (about 3 tablespoons/45 ml), 2 ounces (60 ml) of tequila blanco, and 1-2 teaspoons of agave syrup. Stir well to combine. Taste and adjust sweetness or lime as preferred.
  4. Fill the glass with ice cubes to the top. Gently pour a splash (about 2 ounces/60 ml) of club soda or sparkling water to add effervescence without diluting flavor. Give it a light stir to mix.
  5. Garnish with a lime wedge, a thin jalapeño slice on the rim, and a sprig of fresh mint. Serve immediately for the best chill and fizz.

Notes

Remove jalapeño seeds for milder heat. Do not over-muddle mint and jalapeño to avoid bitterness. Adjust sweetness based on watermelon ripeness. Use large ice cubes to prevent quick dilution. Add sparkling water last and stir lightly to preserve fizz. For non-alcoholic version, omit tequila and add extra sparkling water or lemon juice. For low-carb, substitute agave syrup with stevia or erythritol.
