It’s the kind of drink that makes you close your eyes for a second after that first sip, with a texture that’s icy but not chunky, sweet but not cloying, and with just enough vodka to make a hot afternoon feel like a celebration.

Ingredients

  • Fresh Watermelon (about 4 cups, cubed and frozen)
  • Vodka (1/2 cup, or to taste)
  • Fresh Lime Juice (2 tablespoons)
  • Simple Syrup or Honey (1-2 tablespoons, optional)
  • Ice (1 cup)
  • Fresh Mint Leaves (for garnish)
  • Lime Wheels or Watermelon Wedges (for garnish)

Instructions

  1. Prep the Watermelon (Do this a day ahead): Cut your watermelon into 1-inch cubes. You’ll need about 4 cups. Spread the cubes in a single layer on a parchment-lined baking sheet. Pop them in the freezer for at least 4 hours, or overnight.
  2. Chill Your Glasses (Optional but nice): About 30 minutes before you’re ready to serve, toss your glasses in the freezer.
  3. Combine Ingredients: When you’re ready to make the slushies, add the frozen watermelon cubes, vodka, fresh lime juice, and ice to your blender. If your watermelon wasn’t super sweet, add your simple syrup or honey now.
  4. Blend Until Smooth: Start on low speed and gradually increase to high. You’ll need to stop and scrape down the sides a couple of times. The mixture should be thick, smooth, and a gorgeous deep pink. If it’s too thick to blend, add a tablespoon of cold water at a time until it moves freely. If it’s too thin, add a few more frozen watermelon cubes.
  5. Taste and Adjust: This is the most important step. Take a small taste. Does it need more lime? More vodka? A touch of sweetness? Adjust accordingly and give it one more quick blend.
  6. Serve Immediately: Pour the slushy into your chilled glasses. Garnish each glass with a sprig of fresh mint and a lime wheel or a small wedge of fresh watermelon. Serve with a straw and enjoy immediately.

Notes

The slushy will start to separate as it sits. If you’re making a batch for a party, give it a quick stir or a re-blend right before serving to bring it back to life. For a non-alcoholic version, replace the vodka with an equal amount of cold water or coconut water.
