strawberry basil beer cocktail - featured image

A light, fruity beer cocktail combining fresh strawberries, basil, lemon juice, and a crisp light lager for a refreshing radler-style drink perfect for warm afternoons and casual gatherings.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and quartered
  • 810 fresh basil leaves, plus extra for garnish
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons simple syrup (homemade or store-bought)
  • 12 ounces light lager or pilsner beer (e.g., Modelo, Pacifico, or local craft lager)
  • Optional: club soda or sparkling water (for lighter fizz)
  • Optional: a few ice cubes

Instructions

  1. Hull and quarter about 1 cup of fresh strawberries. Wash 8-10 fresh basil leaves and pat them dry. Squeeze 2 tablespoons of fresh lemon juice. Measure out your simple syrup and beer.
  2. In a mixing glass or cocktail shaker, add the strawberries and basil leaves. Gently muddle using a muddler or wooden spoon โ€” press just enough to release the juices and aroma but avoid turning the mixture into a puree.
  3. Pour in 2 tablespoons of fresh lemon juice and 2 tablespoons of simple syrup. Stir gently to combine, tasting to adjust sweetness if needed.
  4. If you prefer a smoother cocktail, strain the mixture into your serving glass over fresh ice. Otherwise, pour everything โ€” bits and all โ€” for a more rustic feel.
  5. Slowly add 12 ounces (355 ml) of chilled light lager or pilsner to the glass. Pour gently to retain carbonation. Stir lightly to combine without flattening the bubbles.
  6. Add a few fresh basil leaves and a strawberry slice on the rim or floating on top for garnish. Serve immediately while cold and bubbly.

Notes

Muddle gently to avoid bitterness from basil stems and to prevent strawberries from becoming mushy. Use fresh lemon juice and fresh strawberries for best flavor. Add beer last and stir gently to retain carbonation. Adjust sweetness with simple syrup or club soda as desired. Glasses chilled in freezer for 10-15 minutes keep the drink cold longer without diluting.
