  • 1 cup fresh strawberries, hulled and sliced
  • 810 fresh basil leaves
  • 1 tablespoon granulated sugar
  • 1 teaspoon fresh lemon juice
  • 4 ounces champagne or prosecco per glass
  • Ice cubes (optional)

Instructions

  1. Rinse and hull about 1 cup (150 grams) of strawberries, then slice them thinly. Gently wash 8-10 fresh basil leaves and pat dry.
  2. In a mixing glass, add the sliced strawberries, basil leaves, 1 tablespoon (12 grams) of granulated sugar, and 1 teaspoon (5 ml) of fresh lemon juice.
  3. Use a muddler or the back of a wooden spoon to gently press the mixture, releasing the strawberry juices and bruising the basil without shredding it. This should take about 1-2 minutes.
  4. Allow the muddled mixture to sit for 2-3 minutes to let the flavors meld and the sugar dissolve fully.
  5. Strain the mixture through a fine mesh sieve into a clean glass or leave the pulp and basil bits in for rustic charm, depending on your texture preference.
  6. Slowly top off the glass with 4 ounces (120 ml) of chilled champagne or prosecco, pouring gently to keep the bubbles lively and prevent overflow.
  7. Garnish with a fresh strawberry slice and a small basil leaf on the rim. Serve immediately to enjoy the full effervescence.

Notes

Use chilled glasses to keep the mimosa cool longer. Avoid over-muddling basil to prevent bitterness. Freeze strawberries and basil in ice cubes for a colder drink without dilution. Pour sparkling wine slowly to preserve bubbles. Prepare the strawberry-basil mixture up to 12 hours ahead and add sparkling wine just before serving.
