  • 3 to 4 medium limes, juiced and zest reserved
  • 2 cups sparkling water (plain or lime-flavored)
  • 1 cup cold water
  • Ice cubes as needed (preferably large cubes)
  • Fresh mint leaves (optional, a small handful, lightly bruised)

Instructions

  1. Pit about 1 cup of fresh tart cherries. If frozen, thaw completely. Place them in your pitcher or mixing glass.
  2. Using a muddler or wooden spoon, gently press the cherries to release their juice and flavor. Crush but do not pulverize; some chunks add texture. (About 2 minutes)
  3. Roll the limes on the counter to loosen juices, then juice 3 to 4 limes to yield roughly 1/3 cup (80 ml) of juice. Add zest of one lime for extra brightness if desired.
  4. Pour the lime juice and 1 cup (240 ml) of cold water into the muddled cherries. Stir gently to combine and let sit for 5 minutes to marry flavors.
  5. Slowly pour 2 cups (480 ml) of chilled sparkling water into the pitcher. Stir gently to keep the bubbles intact.
  6. Fill glasses with large ice cubes and pour the spritzer over. Garnish with fresh mint leaves and a lime wheel if desired.
  7. Enjoy immediately for best flavor and fizz.

Do not over-muddle cherries to avoid bitterness. Use fresh lime juice for best flavor. Chill all ingredients and equipment before mixing to keep the drink cold longer.
