  • 3 cups (720 ml) canned pineapple juice
  • 1 cup (240 ml) full-fat canned coconut cream
  • 2 cups (480 ml) sparkling water or soda (plain or lightly flavored)
  • 1 cup (150 g) fresh pineapple chunks (fresh or thawed frozen)
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) honey or agave syrup (optional)
  • A handful of fresh mint leaves
  • Ice cubes

Instructions

  1. Chill coconut cream, pineapple juice, and soda in the fridge for about an hour.
  2. Scoop 1 cup (240 ml) of full-fat coconut cream into a large punch bowl or pitcher. Whisk vigorously for 1-2 minutes until smooth and slightly fluffy.
  3. Slowly pour 3 cups (720 ml) of canned pineapple juice into the coconut cream while stirring gently until the mixture turns pale, creamy yellow.
  4. Stir in 2 tablespoons (30 ml) fresh lime juice and 2 tablespoons (30 ml) honey or agave syrup if using. Adjust sweetness or tartness to taste.
  5. Gently add 2 cups (480 ml) chilled sparkling water or soda and stir just until combined to keep the fizz.
  6. Fold in 1 cup (150 g) fresh pineapple chunks and a handful of mint leaves.
  7. Serve over ice cubes in glasses, garnished with a sprig of mint or a small pineapple wedge.

Notes

Whisk coconut cream separately before mixing to avoid lumps. Chill all ingredients beforehand for best refreshment. Add soda last and stir gently to preserve fizz. Can prepare up to 24 hours in advance without soda and ice. Substitute coconut milk for a lighter version but expect less creaminess. Use ginger ale instead of sparkling water for a spicy twist.
