Refreshing Tropical Sunset Mocktail

A vibrant, layered tropical mocktail that captures the essence of summer in a glass with fresh fruit juices and sparkling soda. Easy to make and perfect for any occasion.

Ingredients

  • 1 cup (240 ml) freshly squeezed orange juice
  • 1 cup (240 ml) chilled pineapple juice
  • ยฝ cup (120 ml) mango puree (ripe mango)
  • 2 tbsp (30 ml) grenadine syrup
  • ยผ cup (40 g) fresh or frozen mixed berries (optional)
  • 1 cup (240 ml) club soda or sparkling water
  • 1 tbsp (15 ml) fresh lime juice
  • Thin orange slices for rim decoration
  • Fresh mint leaves, lightly bruised
  • Ice cubes (preferably clear)

Instructions

  1. Prepare the Fruit Components (10 minutes): Squeeze fresh orange juice until you have 1 cup (240 ml). Strain if you prefer pulp-free. Chill the pineapple juice and club soda in the fridge ahead of time. Peel and blend fresh mango to make ยฝ cup (120 ml) puree if not using pre-made. Lightly mash mixed berries or leave whole for texture.
  2. Layer the Mocktail (5 minutes): Fill the glass halfway with ice cubes. Pour the mango puree slowly over the ice, allowing it to settle at the bottom. For a sugar-free version, substitute grenadine with unsweetened pomegranate juice. Prepare juices and puree ahead and assemble just before serving to keep fizz and layers intact.
